“Maki” Birthday Cake

This is the very first raw cake i ever made. The mission was to create something by myself and surprise my love with unique cake for his birthday. It’s raw/vegan/vegetarian cake and it’s very delicious and healthy at the same time. I am sure he didn’t eat a cake like this one before ;)!

Cake is raw, requires no cooking. The bottom layer is made up of a cashews and almonds connected with the agave syrup. The second layer is made up of a soaked cashew nuts, agave syrup and lemon juice! Finally the cream we used for the decoration is made up of mango, orange juice and oat flakes. Instead of using the cream for the decoration you can use it as a top layer. The cake just melts in your mouth! It’s super healthy too, each bite gives you vitamins and nutrients which will give you energy.

Ingredients for the first layer

  • 1 cup of almonds
  • 1 cup of cashews
  • 1 cup of oat flakes
  • 3-4 tablespoon of agave syrup
  • 2-3 tablespoon of coconut oil

Ingredients for the second layer

  • 4 cup of soaked cashews
  • 3-4 tablespoon of agave syrup
  • 1-2 tablespoon of coconut oil
  • lemon juice (2-3 lemons)

Ingredients for the mango cream

  • 1 mango
  • cup of oat flakes
  • 1 tablespoon of agave syrup
  • juice from 2 squeezed oranges
  • teaspoon of coconut oil

Method

First Layer

Grind the almonds, cashews, and oat flakes and put it in a bowl. Add agave syrup, coconut oil and mix it all together ( i do this with the hands). Press this into the base of the cake and form a circle. Use small amount of the mix if you want to create circle bombs for the decoration.


Second Layer

Simply put all the ingredients into the food processor and blend until smooth and creamy. Pour this mix over the base layer and put the cake into the fridge.


Mango Cream

Add all ingredients into the blender and blend it till you get a nice cream. If the cream is to dense add a little bit more of squeezed orange juice or if it’s to thin add a little bit more of oat flakes. Using this cream i styled the cake but you can add it as a top layer of the cake.
